What does the open sets mean? Are we going to have multiple sets to choose from or are we going to have to make a setup from scratch?

We need to make our own set.
If you're new to it, don't fret. Practice makes perfect. Start with the iRacing Daytona Oval setup and adjust it to see where you can find a better, quicker car.
It's a 45 lap race which is probably just outside the fuel window if you're running on your own, outside the draft, not counting caution laps, so keep that in mind too.

Okay thanks and I will have the option to choose the Daytona default setup prior to the race start. Correct?

Just like any other race you can choose any setup that modifies the car in a legal way.

Since this series is going to be unique in that there are no official practice servers to take advantage for open setups, we'll host practice races during our off weeks for the upcoming race. We'll also throw up at least an hour or two practice session prior to the race server going up on raceday. If you find you are struggling with a setup, ask for help. Most will be willing to share base sets that may handle better than the fixed, or at least offer assistance with setup tips, or even watch your line to give pointers there. We ran a practice server this past Tue and Wed. night and we did all of these things for those who asked. From time to time our Pro drivers will stop by these sessions and they are more receptive to helping than you might think. In fact, that may be why they stop by is to offer help so don't be shy to take advantage of it. The worst that can happen is they say they are too busy and can't help right now. Besides being a fun series, one of the objectives of this particular series is to help lesser experienced guys get comfortable on track and in the garage so they can grow as a competitor and eventually move up the ladder. There will be growing pains for most, but that is part of the process. Here are some resources that can help.
